Crunchy Courgette Pickle

Best Recipe for Courgette surplus!
I  love this recipe and eagerly await a glut of Courgettes(Zucchini) each year. If I can keep them until the Autumn/Winter this easy crunchy pickle it spices up a Winter Salad wonderfully with a Summer zingy-ness.
Use a vinegar of your choice from those listed – I don't think it really makes a significant difference to the final flavour of the pickle.

Equipment

  • Saucepan, bowl, sharp knife, chopping board and sterilised jars with screw lids

Ingredients
  

  • 500 g Courgettes/Zucchini sliced
  • 1/2 Red  or Yellow Bell Pepper – finely sliced/chopped
  • 3 Shallots or one small mild onion – finely chopped
  • 2 tbsp Sea Salt 

Pickling Liquid

  • 500ml of Vinegar – Cider or White Wine
  • 140 g Golden Caster Sugar
  • 1 rounded tspn of Whole grain Mustard such as the Maille brand
  • 1 tsp Celery Seed
  • 1/4 tspn Mild Chilli powder
  • 1 tsp Ground Turmeric

Instructions
 

  • Layer the courgettes, pepper and shallots into a large bowl with the salt. Pour ice-cold water over to cover. I place a small plate on top to keep the vegetables submerged and cover the whole bowl with a cloth. Leave to stand for at least an hour.
    When ready to get to the bottling stage make sure you have 2x 500ml jars sterilised or 4x small jars ready.
    Add the sugar and the rest of the pickling ingredients into a Saucepan. Bring to the boil then simmer for 3 minutes. Make sure the sugar has dissolved. Remove from the heat and allow to cool to lukewarm.
    Drain the Courgette mixture and pat dry on a clean tea towel. Add the mixture to the pickling liquid and gently stir.
    Scoop the pickle into the jars and pour in enough of the pickling liquid to cover the mixture. Seal and label. Leave in the fridge for a few days. If you keep this pickle in the fridge it will keep for a couple of months – that's if you can keep your hands off it!
